Snapped the below photo of my baby pie eating a blueberry crumb muffin from CBTL on Saturday and thought it’d be fun for me and the little one to bake our own.
Isla loves to bake. She puts on the cutest little apron and mixes anything and everything. I set up the ingredients for her to add into the two separate mixing bowls (wet and dry), whisk and combine. Muffins are the perfect thing to bake with her since they don’t require the butter and sugar to be creamed together with a stand or handheld mixer!
The muffin batter is spice-ful (is that not a word? I didn’t want to use “spicy” because they’re not spicy-hot, but the nutmeg and cinnamon and allspice come through quite nicely) and not too sweet — its that crumb topping that’s sweet, so you can omit it or just use less of it if you’d like! Adding some chopped nuts to it may be super tasty too!
Berry Crumb Muffins (from The New School of Cooking in Culver City, CA)
350F (makes 12 delicious muffins)
Crumb Topping
- 1/2 cup flour
- 1/2 cup brown sugar
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 2 1/2 oz cold unsalted butter
Muffin Batter
- Dry Bowl
- 2 cups flour
- 1/4 cup sugar
- 1/4 tsp nutmeg
- 1 tsp cinnamon
- 1/4 tsp allspice (I only used about 1/8 tsp because I was too lazy to grind the allspice berries and ended up just grating about 1/8 tsp worth with the spice grater. :))
- 1/2 tsp salt
- 1 Tbsp baking powder
- Wet Bowl
- 1/2 cup brown sugar
- 2 eggs
- 1/3 cup canola oil
- 2/3 cup milk
- 1 tsp vanilla extract
- 1 1/2 cups blackberries, blueberries, or raspberries
Instructions:
Make the crumb topping by combining the first five (5) ingredients, cutting in the butter, then refrigerating.
Combine the dry ingredients and whisk. Combine the wet ingredients and mix. Put them together (fold gently — lumps are okay!). Add in berries. Distribute into lined muffin pan. Top with crumb mixture. Bake at 350F for 25 minutes.
Then proceed to remove the blueberries because your daughter, who said she wanted blueberries in them, decided she no longer likes blueberries. #momlife
