Isla’s FAVORITE Banana Muffins

I’m putting the “favorite” in caps because  we’ve baked these muffins every week for the past three weeks!  Isla loves them for breakfast (with her yogurt) or sometimes even as an after school snack.  Parish loves them because they’re great on the go as he grabs his coffee on the way out the door for work.

Isla is truly her daddy’s daughter.  Parish loves loves loves banana bread, more specifically, he loves this version of banana bread with pecans from Tyler Florence. Isla, however, doesn’t like nuts in her banana bread — go figure, she loves pecan tarts and pistachios, cashews and peanuts though!

This is another recipe where little hands are helpful and can do the majority of the mixing. 🙂

I may experiment more with this by lowering the temperature.. and also maybe adding more eggs and swapping out the flour for coconut flour.

Isla’s Favorite Banana Muffins

350F (makes 12 muffins)

Ingredient List
3 mashed up bananas
1/3 cup olive oil
1/2 cup honey
1 egg
1 tsp vanilla
1/2 tsp salt
1 tsp baking soda
1.5 cups flour

Instructions
Mix everything together. Ice cream scoop into lined muffin tin and bake for 20-22 minutes!  They taste better the next day, so bake them at night and have one for breakfast!

(You could muffin-method this by having a wet bowl and a dry bowl and mixing them together… but I honestly just threw all of this stuff together in one bowl and it turned out alright!)
